A Great All Day Breakfast
A fantastic savory all-day meal that can be whipped up in no time from leftover potatoes. Cheesy, yummy and satisfying.
Grilled Cheezy Potatoes with Eggs Recipe

A quick and easy 'basic-ingredients' all-day breakfast
- 4 - 5 slices Cooked potato slices Leftover potatoes sliced about a quarter inch thick
- 4 - 5 slices Cheddar cheese slices Slice up cheese to match potato sizes
- 2 medium eggs preferably free range
- 1 small bunch Cilantro
- Seasoning to taste
- Slice up leftover potatoes into 1/4 inch thick pieces and toast one side in a grill/oven for about 3 - 4 minutes.
Flip over, place sliced cheese, and season with salt & pepper, and a touch of cayenne pepper --back in the oven on high, and grill for another couple of minutes until cheese is bubbling and starting to brown.
Remember - top shelf of the oven is where this has to go.
While this is happening, fry a couple of eggs in some olive oil. Cook them to your liking.
Turn off heat and mop up remaining pan oil with a bit of cilantro until slightly wilted.
Season to taste. Done !
Serve with a cup of coffee or tea. Enjoy!
