You’ve got to trust me on this one. Okra goes wonderfully well with halibut! If done my way….

Halibut & Okra Recipe

A simple delicious fish dinner

Ingredients

  1. Pre heat oven.
    Place okra and tomatoes in an oven proof dish. Sprinkle with salt and pepper.
    Rub a bit of olive oil on the fish and generously season with sea salt, garlic powder and cayenne.
    Place fish on top of the vegetables and drizzle with extra virgin olive oil before placing on the top shelf of your oven.
    Keep an eye on it. When the fish has taken on a golden color remove from oven. Remove the fish onto another plate to rest for about 3 minutes while you plate the vegetables.
    Place the halibut over the okra and give it a good squeeze of lemon juice. Drizzle with juices from the pan and serve.
    You need to play with this recipe to get the seasoning right. If the cayenne and the garlic are just right, you will end up with a truly wonderful tasting halibut dish.
