Grilled Hoki Fillet with Okra

Basil Grilled Fish Recipe

A delightful fish dish with simple clean flavors
- 1 pc New Zealand Hoki fillet Season with sea salt and pepper
- A few pcs Small okra
- A few pcs cherry tomatoes
- A few Fresh basil leaves
- 1/2 Lemon
- Extra virgin olive oil
- Pre heat oven - High.
Place the okra and tomatoes in an oven proof dish. Add sea salt and pepper, and drizzle with olive oil.
Rub olive oil over the fish, and carefully stick some basil leaves on.
Sprinkle salt and pepper, and place the fish over the vegetables.
Do not cover.
Drizzle some more olive oil and place in oven for about 15 minutes.
Remember to place on top shelf.
When done, remove from oven and rest 5 minutes before serving.
Place the okra and tomatoes on the serving plate first, and the fish on top. Spoon over the cooking juices.
A squeeze of fresh lemon juice, and there you have it.
All that's missing is a glass of white wine.
